There’s not much more satisfying than having some fruit with chocolate, and adding wine to the mix makes it that much more pleasurable. When the concept for this wine came up, my first thought was of one of my favorite cakes: Schwarzwaelder Kirschtorte (“Black Forest Cherry Cake”). If you’ve ever had it (or just Google it), you’ll realize it’s not a big heavy dessert. It’s a balanced cake that has layers of chocolate and cocoa character that is off-set with cherry flavors. It’s just this style that I was trying to emulate in your glass.
For this wine, we used Chambourcin grown in the Naylor vineyard as a base wine. Chambourcin has classic cherry flavors that we kept pure and clean by fermenting the grapes in stainless steel tanks. The wine is sweet, but not so sweet that it comes across as cloying (Chambourcin has naturally nice acidity.) This wine is simply dessert in your glass!
