Cabernet Sauvignon is the classic Bordeaux variety that has found a home in many parts of the world, but East coast Cabernets tend to reflect their historical roots much more than most places. Even though we have a continental climate (as opposed to the maritime climate of Bordeaux), our cooler temperatures and warmer nights allow for a more nuanced expression of the wine.
Our 2019 Cabernet Sauvignon is aged in French oak barrels to tame its notoriously tough tannins. In addition, we blended in Merlot (around 20%) to help soften the wine. Cabernet has a lot of structure and needs the body of Merlot to flesh it out. This 2019 wine reflects a more classic vintage than our previous (2018) one. The resulting wine has firm tannins with deeper and darker flavors. Enjoy it with most red meat dishes or hard cheeses.
