I've always considered Chambourcin a grape that could use a little something … sure, it makes great Rosé wines as well as our Forte, but as a dry wine I feel like there's something missing. Sometimes we make a Merlot Chambourcin blend where the Merlot fills in the middle that's missing in the Chambourcin palate. Now, with this new Cabernet Sauvignon Chambourcin—what a mouthful of a name—we've added the structure of Cabernet to play off the innate softness of Chambourcin.
